Extra virgin olive oil
To clean and prepare the artichokes it is necessary to get rid of the outer leaves then chop the top of the leaves off. Open the top of artichoke as if you were trying to open the bulb of a flower, add some salt in the leaves/petals and set in the casserole as showed in photograph 3. Add a couple of spoonfuls of oil in the casserole, a 1/4 glass of water and 1/4 glass of wine. Let cook at slow heat with a lid on the casserole. If the liquid evaporates before they are cooked add some more water.
